Ingredients

For 8 servings:

  • A 2 kg rooster (gutted and cut into pieces)
  • 2 carrots
  • 2 onions
  • 1 bouquet garni
  • Pepper
  • 1 clove of garlic
  • 1 bottle of red wine
  • 2 tablespoons of sugar
  • 250 gr of bacon
  • Salt
  • Leaves or seeds of allspice
  • 1 vegetarian pepper (sweet pepper)
Preparation
  1. The day before, peel the garlic and onion and mince them.
  2. Put them in a deep dish with the pieces of rooster, the bouquet garni and the pepper.
  3. Pour in the wine, cover and leave to cool overnight (refrigerator).
  4. The next day, take the chicken pieces out of the refrigerator.
  5. In a large saucepan, pour the sugar to make caramel.
  6. Add the bacon cut in pieces and brown them.
  7. Pour the mixture of pieces of rooster with the spices in the container with the caramel.
  8. Brown the chicken and flip it several times.
  9. Add water little by little without exaggerating so that the skin of the chicken is golden brown.
  10. Peel the carrots, cut them into small pieces and add them to the mixture.
  11. Add the Indian wood and the vegetarian pepper cut into slices.
  12. Prick the pieces of chicken with a fork so that it cooks well, especially near the bones.
  13. Stir occasionally with a wooden spoon.
  14. Once cooked, turn off the heat and let cool.
