Ingredients
For 8 people:
- 1 whole chicken or 6 thighs or 10 drumsticks
- 400 ml coconut milk
- 1 lime
- 1 teaspoon of turmeric
- 1 pinch of cumin
- 2 pinches of curry
- 2 leaves of allspice
- 4 cloves of garlic, pressed
- 3 chopped onions
- 2 crushed tomatoes
- Salt
- Pepper
- 1 tablespoon of oil
- 1 chili (if you like to eat spicy)
Preparation
- Cut the chicken into at least eight pieces.
- Marinate it with the garlic, lemon juice, turmeric, cumin, salt, pepper and curry.
- Using oil, brown the chicken on all sides for 5 to 7 minutes.
- Add the onions and sauté 3-5 min.
- Add the tomatoes and mix well.
- Add salt and pepper.
- Over low heat, cover and simmer for 20-25 minutes, turning the pieces.
- Add the coconut milk and mix. Add the allspice and the chilli (if you like to eat spicy).
- Simmer for a quarter of an hour.
- Serve hot.
