Martinican coconut chicken

Martinican coconut chicken is a must-have recipe in restaurants on the island. It is a recipe that combines chicken with local flavors such as coconut or spices such as wood and chili. Ingredients

For 8 people:

  • 1 whole chicken or 6 thighs or 10 drumsticks
  • 400 ml coconut milk
  • 1 lime
  • 1 teaspoon of turmeric
  • 1 pinch of cumin
  • 2 pinches of curry
  • 2 leaves of allspice
  • 4 cloves of garlic, pressed
  • 3 chopped onions
  • 2 crushed tomatoes
  • Salt
  • Pepper
  • 1 tablespoon of oil
  • 1 chili (if you like to eat spicy)
Preparation
  1. Cut the chicken into at least eight pieces.
  2. Marinate it with the garlic, lemon juice, turmeric, cumin, salt, pepper and curry.
  3. Using oil, brown the chicken on all sides for 5 to 7 minutes.
  4. Add the onions and sauté 3-5 min.
  5. Add the tomatoes and mix well.
  6. Add salt and pepper.
  7. Over low heat, cover and simmer for 20-25 minutes, turning the pieces.
  8. Add the coconut milk and mix. Add the allspice and the chilli (if you like to eat spicy).
  9. Simmer for a quarter of an hour.
  10. Serve hot.
