Pâtés salés are small pleasures that are prepared for Christmas Eve. The Christmas tradition was that families living in the countryside slaughter a pig on Christmas Eve and the meat would be used entirely to prepare the Christmas meal. Thus the main meal is the pork stew and the other parts were collected to make blood sausage or pâtés salés. If since the pâté salé is present all year round in the pastries of the island, it is much more frequent at Christmas.
For those who don't eat pork, there are also chicken-based pâtés.
