Shark tuft

The shark is a rather rare fish in Martinique but when you manage to get it, you have to take advantage of it to make a sumptuous recipe. The sharks that can be found around Martinique are the lemon shark, reef shark, tiger shark, sleeper or nurse shark, mako shark, black tip shark, bulldog shark or even bull shark. These sharks are still very rare. Local fishermen have to get out to sea and catching a shark is such a rare occurrence that it is often reported in the media. So have no fear when swimming, sharks never arrive on the Martinique coast. Coming back to the recipe, this is a quality dish that is on the menu of some local restaurants... if the fishing was successful!

Ingredients

For 6 persons:

  • 600 gr of shark
  • 1 onion
  • 1 clove of garlic
  • 2 shallots
  • 1 bouquet garni
  • 3 tomatoes
  • Pepper
  • Salt
  • Pepper
  • 1 lime
  • 1 tablespoon of oil
  • Parsley
     

For the marinade:

  • Garlic
  • Salt
  • Pepper
  • A sheet of allspice
  • 2 limes
  • 10 cl of water
Preparation
  1. Take the ingredients of the marinade, crumble them and put the shark pieces to soak for at least 1h30.
  2. Brown the onion and shallots in the oil.
  3. Add the bouquet garni, the peeled tomatoes without their seeds.
  4. Salt, pepper and spice.
  5. Add a clove of garlic.
  6. Take the shark pieces out of the marinade and drain them.
  7. Let them cook for about twenty minutes very slowly.
  8. Serve hot with the lime juice and chopped parsley.
